  • 3 cups almond flour
  • 1 cup rolled oats
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 2 Tbsp nut milk
  • 1 tsp vanilla extract
  • 1/8 tsp sea salt
  • 3 cups blackberries
  • 1/4 cup unsweetened shredded coconut
  • 1 Tbsp corn starch
  • 1/4 cup honey
  • 3/4 cup water

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, oats, melted coconut oil, maple syrup, nut milk, vanilla extract, and sea salt. Mix until crumbly.
  3. Reserve 1 cup of the mixture; press the rest into the bottom of an 8-inch springform pan to form the crust.
  4. Pre-bake crust for 10 minutes.
  5. In a saucepan, combine blackberries, coconut, corn starch, honey, sea salt, and water; bring to a boil then simmer for 10-15 minutes until berries are soft.
  6. Pour filling into pre-baked crust; sprinkle reserved crumble on top.
  7. Bake for another 10 minutes until golden brown.
  8. Let cool for 20 minutes before chilling in the fridge for at least 2 hours before serving.
