  • ¼ cup light brown sugar
  • 1 large egg
  • 1½ cups all-purpose flour
  • 1 teaspoon cream of tartar
  • ¾ teaspoon cinnamon (plus additional for topping)
  • ¼ teaspoon nutmeg (for topping)
  • 1/8 teaspoon salt
  • ½ teaspoon baking soda

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together apple cider and softened butter until combined.
  3. Add sugars and mix until fluffy, then beat in the egg.
  4. In another bowl, combine flour, cream of tartar, baking soda, and salt; gradually mix this into the wet ingredients.
  5. Refrigerate dough for 30 minutes to prevent spreading.
  6. While chilling, mix sugar, cinnamon, nutmeg, and allspice in a small bowl for topping.
  7. Scoop tablespoon-sized amounts of dough, roll into balls, and coat in the topping mixture.
  8. Place on parchment-lined baking sheets and bake for 12–15 minutes until edges are golden.
