- 1 cup (226 g) unsalted butter, room temperature
- 1/2 cup (100 g) granulated sugar
- 1/2 cup (100 g) light brown sugar, packed
- 3 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 cups (250 g) all-purpose flour, spooned and leveled
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground nutmeg
- 1/3 cup apple cider
- 1/3 cup fresh apple, peeled and grated
- Preheat your oven to 325°F (163°C) and line a 9 x 5 loaf pan with parchment paper.
- Cream together unsalted butter, granulated sugar, and light brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- In another bowl, whisk together flour, baking powder, ground cinnamon, ground ginger, nutmeg, and salt.
- Gradually mix the dry ingredients into the butter mixture, alternating with apple cider.
- Gently fold in the grated apples until just combined.
- Pour the batter into the prepared pan and bake for 55 to 60 minutes or until a toothpick comes out clean.
- Cool in the pan for 15 minutes before transferring to a wire rack.
