  • 1/2 tsp salt (divided)
  • Avocado oil spray (or 1 to 2 tsp liquid oil)
  • 1 tsp smoked paprika
  • 1/4 tsp ground pepper

Instructions

  1. Preheat your oven to 225°F (107°C) and line two baking sheets with parchment paper.
  2. Slice the zucchini crosswise into 1/8 inch thick slices using a mandolin slicer.
  3. Layer the zucchini slices in a colander, sprinkling with 1/4 tsp salt as you go. Let them drain for one hour.
  4. After draining, pat the zucchini dry with tea towels and arrange them on the prepared baking sheets without overlapping.
  5. Lightly spray or brush the slices with avocado oil and sprinkle with smoked paprika, ground pepper, and remaining salt.
  6. Bake for 70 to 90 minutes until crispy, rotating sheets halfway through baking.
