  • 1 small red bell pepper
  • 1 medium zucchini
  • 6 green onions
  • 2 cups enchilada sauce
  • 1 can black beans
  • 1 cup frozen corn
  • 8 corn tortillas
  • 1.5 cups shredded Mexican blend cheese

Instructions

  1. Preheat the oven to 425°F.
  2. In a large oven-safe skillet over medium-high heat, spray with cooking spray and add olive oil.
  3. Add ground beef, diced bell pepper, zucchini, and white parts of green onions. Cook until beef is browned and veggies are tender (about 8 minutes).
