  • 2 Tablespoons Olive Oil
  • 4 Yellow Onions (sliced thin and evenly)
  • 2 Pounds Yukon Gold Potatoes (washed)
  • 4 Tablespoons Salted Butter (or non-dairy butter)
  • 3/4 Cup Half & Half or Full-Fat Coconut Milk
  • 1 Teaspoon Kosher Salt
  • 1 Cup Parmesan Cheese (freshly grated)
  • 1 Bunch Chives (thinly chopped)
  • 2 Sprigs Fresh Thyme (stems removed)
  • 3 Leaves Fresh Sage (chopped)

Instructions

  1. Slice the onions thinly and caramelize them in olive oil over medium heat for 40–50 minutes until golden brown.
  2. Wash and chop the Yukon Gold potatoes into small pieces.
  3. Boil the potatoes in salted water for about 20 minutes until fork-tender.
  4. Drain the potatoes, then mash them until smooth.
  5. Stir in butter, kosher salt, and half & half (or coconut milk) until combined.
  6. Mix in half of the caramelized onions and grated Parmesan cheese.
  7. Transfer to a serving bowl and top with remaining onions and fresh herbs before serving.
