  • 2 cups raw sweet potato (minced)
  • 2 large eggs
  • 3/4 cup black cocoa powder
  • 1/2 cup coconut oil
  • 1/2 cup maple syrup
  • 1/2 cup coconut sugar
  • 1/4 cup coconut flour
  • 1 tablespoon vanilla extract
  • 2 teaspoons baking powder
  • 1 teaspoon sea salt
  • 1 3/4 cup sweet potato (cubed)
  • 1/2 cup avocado
  • 1/2 cup soft medjool dates (pitted)
  • 1/2 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line two 6-inch springform pans with parchment paper.
  2. In a food processor, mince the raw sweet potato until finely chopped. Transfer it to a blender along with the remaining cake ingredients. Blend until smooth.
  3. Divide the batter between the prepared pans and bake for 45–50 minutes or until a toothpick comes out clean. Cool in the freezer while preparing the frosting.
  4. Steam sweet potato cubes until tender, then cool in an ice bath. Blend them with all frosting ingredients until smooth and chill until ready to use.
