  • 23 tablespoons cream cheese (softened)
  • ¼ cup fresh blueberries
  • 1 teaspoon honey or maple syrup (optional)
  • A pinch of cinnamon
  • Cooking spray or butter

Instructions

  1. In a small bowl, blend cream cheese with cinnamon and honey until smooth.
  2. Lay the tortilla flat and spread the cream cheese mixture over half of it.
  3. Scatter blueberries on top of the cream cheese layer and fold the tortilla in half.
  4. Heat a non-stick skillet over medium-low heat, lightly greased with cooking spray or butter.
  5. Cook the quesadilla for 2–3 minutes per side until golden brown, pressing gently with a spatula.
  6. Allow to cool slightly before slicing into wedges.
