  • 1 1/2 cups fresh broccoli florets
  • 1 cup shredded Colby cheese
  • 1 cup shredded cheddar cheese
  • 4 ounces Velveeta cheese
  • 2 1/4 cups Panko crumbs (divided)
  • 1 egg (lightly beaten)
  • 1/2 cup all-purpose flour
  • 2 eggs (lightly beaten)
  • Vegetable or Canola oil for frying

Instructions

  1. Steam broccoli until slightly softened and chop finely.
  2. In a mixing bowl, combine chopped broccoli, cheeses, red pepper flakes, 1/4 cup Panko crumbs, and 1 egg. Mix well.
  3. Shape the mixture into balls (12-14 total) and refrigerate for at least 30 minutes.
  4. Set up breading stations with flour in one bowl, the egg mixture in another, and remaining Panko crumbs in a third bowl.
  5. Heat oil in a Dutch oven to 375°F.
  6. Coat each ball in flour, dip in egg mixture, then coat with Panko crumbs. Fry until golden brown on all sides.
  7. Drain on paper towels before serving warm.
