  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tbsp heavy cream
  • 1 1/2 tsp vanilla extract
  • 1 1/4 cup all-purpose flour
  • 3/4 cup semi-sweet chocolate chips
  • 3 cups kataifi (shredded phyllo dough)
  • 1 cup pistachio cream/butter
  • 2 cups heavy cream (for ganache)

Instructions

  1. Preheat your oven to 350ยฐF and prepare an 8ร—8-inch baking pan by greasing it and lining it with parchment paper.
  2. In a medium saucepan, melt the butter over medium-high heat until browned; set aside to cool slightly.
  3. In a bowl, whisk together flour, baking soda, baking powder, and salt; set aside.
  4. Combine sugars with the cooled brown butter, then mix in the egg, heavy cream, and vanilla extract until well blended.
  5. Fold in the dry ingredients followed by the chocolate chips until just combined.
  6. Spread the dough into the prepared pan and bake for 22-27 minutes until lightly golden; cool.
  7. Prepare the pistachio filling by toasting kataifi in melted butter until golden and mixing with pistachio cream.
  8. Make ganache by heating cream and pouring it over chocolate chips; stir until smooth.
  9. Assemble by layering pistachio filling over cookie base and topping with ganache; refrigerate for at least one hour before cutting.
