  • 1 medium head of cauliflower (cut into florets)
  • 2 Tbsp olive oil
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 2 Tbsp tomato paste
  • 1 can (8 oz) tomato sauce
  • 2 cups vegetable broth
  • 1/2 cup full-fat canned coconut milk
  • 2 Tbsp fresh lemon juice
  • 2 tsp corn starch
  • 1/2 tsp ground cumin
  • 1 tsp ground turmeric (divided)
  • 3 tsp garam masala (divided)
  • 1 1/2 tsp salt (divided)
  • 1 tsp paprika
  • 1/4 tsp ground cinnamon
  • Pinch of cayenne pepper (optional)

Instructions

  1. In a mixing bowl, combine lemon juice, corn starch, cumin, turmeric, garam masala, and salt.
  2. Heat 1 Tbsp of olive oil in a large skillet over medium-high heat; cook cauliflower for 7-8 minutes until browned and slightly softened. Toss with seasoning mixture and return to skillet; cook another 7-8 minutes until charred.
  3. Add remaining oil and butter to skillet; sauté onion until translucent. Stir in garlic, ginger, tomato paste, and spices; cook for another 2 minutes.
  4. Add tomato sauce and broth; bring to a boil then reduce heat to simmer. Stir in coconut milk and return cooked cauliflower; simmer uncovered for about 15 minutes until sauce thickens.
