  • 1.5 cups fresh chopped tomatoes
  • 1/2 yellow onion
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 lb pasta (your choice)
  • 1/3 cup reserved pasta water

Instructions

  1. Preheat the oven to 450°F and line a baking sheet with parchment paper.
  2. Spread the frozen butternut squash, chopped tomatoes, and sliced onion on the baking sheet.
  3. Drizzle with olive oil and season with salt, pepper, and thyme; mix well.
  4. Bake for about 20 minutes until tender and caramelized.
  5. Cook pasta according to package instructions until al dente; reserve 1/3 cup of pasta water before draining.
  6. Blend the roasted vegetables with reserved pasta water until smooth.
  7. Combine the sauce with cooked pasta and toss gently to coat.
