Ingredients

Scale
  • 12 oz (340g) pasta (spaghetti, fettuccine, or penne)
  • 2 large onions, thinly sliced
  • 4 tablespoons olive oil (2 for onions, 1/4 cup for chili oil)
  • 1 tablespoon butter
  • 1 tablespoon chili flakes
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil and butter over medium-low heat. Add sliced onions and a pinch of salt; stir occasionally for even caramelization (about 25-30 minutes).
  3. In a small saucepan, combine olive oil, chili flakes, minced garlic, smoked paprika (if using), and salt over low heat for about 5 minutes until fragrant.
  4. Mix cooked pasta with caramelized onions in the skillet. Pour in the chili oil mixture and toss until well combined. Adjust seasoning as needed.
  5. Serve garnished with fresh parsley and grated Parmesan cheese if desired.
