  • 3/4 cup all-purpose flour (or chickpea flour for gluten-free)
  • 3/4 cup unsweetened almond or soy milk
  • 1/4 cup water
  • 2 teaspoons garlic powder
  • 2 teaspoons paprika powder
  • 1 cup panko bread crumbs
  • 1 cup buffalo sauce (such as Frank's Red Hot)
  • 1 tablespoon olive oil
  • 1/2 cup vegan mayonnaise
  • 1 teaspoon dried dill
  • 1 teaspoon dried parsley

Instructions

  1. Preheat your oven to 350 °F (175 °C) and line a baking sheet with parchment paper.
  2. Cut the cauliflower into bite-sized florets.
  3. In a bowl, mix the flour, plant-based milk, water, garlic powder, paprika powder, salt, and black pepper until smooth.
  4. Dip each cauliflower floret into the batter and then coat with panko bread crumbs.
  5. Arrange the coated florets on the baking sheet without overlapping and bake for 25 minutes.
  6. Combine buffalo sauce and olive oil in a bowl, then toss the baked cauliflower in this mixture until evenly coated.
  7. Return the wings to the baking sheet and bake for an additional 20 minutes until crispy.
  8. For the vegan ranch dip, mix vegan mayonnaise with dried dill and parsley.
