- 1 ½ Cups Low Carb Pulled Beef
- 2 Heads Cauliflower (cut into florets)
- 2 Small Tomatoes (chopped)
- 1 Medium Green Bell Pepper (chopped)
- 2 Green Chillies or Jalapeños (sliced)
- ½ Cup Parmesan Cheese
- 1 Cup Freshly Grated Mozzarella Cheese
- Olive Oil
- Low Carb Taco Seasoning
- Salt and Ground Black Pepper
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Spread cauliflower florets on the baking sheet, drizzle with olive oil, and season with taco seasoning, salt, and pepper.
- Roast in the oven for 5-7 minutes until slightly tender.
