  • 1 ½ Cups Low Carb Pulled Beef
  • 2 Heads Cauliflower (cut into florets)
  • 2 Small Tomatoes (chopped)
  • 1 Medium Green Bell Pepper (chopped)
  • 2 Green Chillies or Jalapeños (sliced)
  • ½ Cup Parmesan Cheese
  • 1 Cup Freshly Grated Mozzarella Cheese
  • Olive Oil
  • Low Carb Taco Seasoning
  • Salt and Ground Black Pepper

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Spread cauliflower florets on the baking sheet, drizzle with olive oil, and season with taco seasoning, salt, and pepper.
  3. Roast in the oven for 5-7 minutes until slightly tender.
  4. Remove from oven and top each floret with pulled beef, chopped tomatoes, bell pepper, and sprinkle with parmesan and mozzarella cheese.
  5. Add sliced chillies for an extra kick.
  6. Return to the oven and bake for an additional 10-12 minutes until cheese is melted.
