  • 2 tablespoons avocado oil
  • 1 large zucchini (quartered)
  • 1 large yellow squash (quartered)
  • 2 cups Brussels sprouts (quartered)
  • 1/2 yellow onion (sliced)
  • Seasoning: salt, dill weed, dried parsley, dried chives, onion powder, garlic powder, black pepper
  • 4 slices turkey bacon (cooked and chopped)
  • 1/2 cup homemade ranch dressing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine chicken pieces with avocado oil and seasonings. Toss until well-coated.
  3. Spread the seasoned chicken on one side of a sheet pan; arrange vegetables on the other side.
  4. Roast for about 25–30 minutes until chicken is cooked through and veggies are tender.
  5. Sprinkle crispy turkey bacon over the top.
  6. Drizzle ranch dressing over each bowl before serving.
