2 cups all-purpose flour
3/4 tsp salt
3/4 cup warm water
1 lb extra firm tofu
1 tsp turmeric powder
1 cup finely shredded carrots
1 cup chopped scallions
1/2 cup diced red bell peppers
Sesame oil (for cooking)
Instructions
Prepare the Dough: In a bowl, mix flour and salt. Gradually add warm water until a dough forms. Knead until smooth, then cover with a damp cloth and let rest for 30 minutes.
Make the Filling: Crumble tofu into a bowl and mix with turmeric, salt, carrots, scallions, bell peppers, and sesame oil. Stir-fry over medium heat until heated through.
Assemble: Divide the dough into eight pieces, roll each into a circle, place filling in the center, fold edges over to seal.
Cook: Heat sesame oil in a skillet over medium heat and cook each pancake for about 3-4 minutes per side until golden brown.
