  • 2 cups shredded mozzarella cheese
  • 1½ cups superfine almond flour
  • 1 cup shredded cheddar cheese
  • ½ cup chopped cooked turkey bacon
  • 3 large eggs
  • 2 tsp baking powder
  • 1 (1-oz) package ranch dressing mix

Instructions

  1. Preheat your oven to 400ºF.
  2. In a microwave-safe bowl, melt cream cheese and mozzarella cheese on HIGH for about 1 minute; stir until smooth.
  3. Add baking powder, eggs, ranch mix, and almond flour to the melted cheese mixture; stir until combined.
  4. Mix in shredded cheddar cheese and turkey bacon until evenly incorporated.
  5. Spray a 10-inch iron skillet with cooking spray and divide the dough into 11 or 12 balls; place in the skillet.
  6. Refrigerate for about 10 minutes before baking.
  7. Bake for 20 to 25 minutes until golden brown; brush with melted butter if desired.
