  • 2 tbsp butter or olive oil
  • 1 ½ lb chicken thighs
  • 4 cloves garlic
  • 1/3 cup sun-dried tomatoes
  • 4 cups chicken broth
  • 8 oz cauliflower florets
  • 6 oz fresh spinach
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese

Instructions

  1. In a Dutch oven, melt 1 tbsp butter over medium heat. Season chicken with salt and pepper, add to the pot along with sun-dried tomatoes. Sauté until cooked through (5-7 minutes). Remove and set aside.
  2. In the same pot, add remaining butter, garlic, tomato paste, and Italian seasoning; sauté for 2 minutes. Pour in chicken broth.
  3. Add cauliflower florets; boil then simmer until tender (about 10 minutes). Blend until smooth.
  4. Return blended soup to pot; add chicken and spinach. Simmer until spinach wilts.
  5. Stir in cream and Parmesan cheese until combined. Serve hot.
