  • 1 can (28oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup heavy cream (or dairy-free alternative)
  • 5 oz fresh baby spinach
  • 1/2 cup grated Parmesan cheese (or plant-based alternative)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Bring a large pot of salted water to a boil. Cook the gnocchi according to package instructions until they float; then drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté the onion until softened, about 5 minutes.
  3. Add minced garlic and tomato paste; cook for another minute until fragrant.
  4. Stir in crushed tomatoes, oregano, basil, salt, black pepper, and optional red pepper flakes. Simmer for at least 15 minutes.
  5. Remove from heat; stir in heavy cream and Parmesan cheese until melted.
  6. Fold in fresh spinach until wilted.
