  • 1 pound ground turkey
  • 1 small sweet onion (finely diced)
  • 1 cup shredded carrots
  • 3 garlic cloves (finely minced)
  • 1 teaspoon finely minced fresh ginger
  • ¼ cup chicken broth
  • 1 small head cabbage (about 8 cups shredded)
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon toasted sesame oil
  • Cooked white rice
  • Green onions (green parts only, thinly sliced)
  • Toasted sesame seeds
  • Sriracha Mayo (optional)

Instructions

  1. In a large skillet, heat 1 tablespoon olive oil over medium heat. Cook 1 pound of ground turkey until almost cooked through (5-6 minutes).
  2. Push the turkey aside; add 1 diced onion and 1 tablespoon olive oil. Sauté for 3 minutes, then add 1 cup shredded carrots, 3 minced garlic cloves, and cook for 2 more minutes.
  3. Pour in ¼ cup chicken broth along with shredded cabbage (8 cups), 3 tablespoons soy sauce, and seasonings. Stir well, cover, and cook on medium-low for 12-15 minutes until cabbage is tender.
  4. Serve over white rice and garnish with green onions and sesame seeds.
