  • 3/41 cup cold purified water
  • 1/2 cup unsalted cold butter
  • 1 small egg (for egg wash)

Instructions

  1. In a large bowl, whisk together gluten free flour blend, cane sugar, and salt. Gradually add cold water and mix gently.
  2. Incorporate cold butter chunks until the dough forms lumps. Wrap the dough in plastic wrap and chill for 30–45 minutes.
  3. Roll out the chilled dough on a floured surface to about 1/4 inch thick. Fold it like an envelope and repeat the rolling and folding process several times.
  4. Cut into rectangles, fill each with your preferred filling, seal, and brush with egg wash.
  5. Preheat oven to 425º F. Freeze pastries for about 15 minutes before baking for 15–20 minutes until golden brown.
