  • 1 tablespoon oil
  • 6 cloves garlic
  • 1/41/3 cup low sodium soy sauce or tamari
  • 2 tablespoons veggie broth
  • 1 1/2 tablespoons rice vinegar
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons tahini
  • 2 teaspoons sriracha
  • 1/2 teaspoon ground ginger

Instructions

  1. Cook the brown rice noodles according to package instructions in a large pot of boiling water until al dente.
  2. Mince the garlic finely or use a garlic press.
  3. Heat oil in a pan over medium heat and sauté the minced garlic until golden brown, being careful not to burn it.
  4. In a bowl, whisk together soy sauce, veggie broth, rice vinegar, sesame oil, honey (or maple syrup), tahini, sriracha, and ground ginger until smooth.
  5. Pour the sauce mixture into the pan with the sautéed garlic and let simmer for 2-3 minutes.
  6. Drain the cooked noodles and add them to the pan with the sauce; toss until well coated before serving.
