  • 4 chicken fillets
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp sweet paprika
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 shallot (finely chopped)
  • 4 garlic cloves (minced)
  • 1 tbsp dry apple vinegar
  • 1 tsp dried basil
  • 2 tbsp tomato paste
  • ½ cup chicken broth
  • 1 can (14 oz) cherry tomatoes
  • 3 tbsp chopped basil leaves
  • 2 mozzarella balls (chopped)
  • 3 tbsp grated Parmesan
  • crushed red pepper flakes (for sprinkling)

Instructions

  1. Season the chicken fillets with salt, black pepper, garlic powder, and paprika.
  2. Heat olive oil in a skillet over medium-high heat. Cook the chicken for about 5 minutes per side until browned and cooked through.
  3. Remove the chicken and set aside. In the same skillet, sauté minced garlic and chopped shallot until fragrant.
  4. Deglaze with apple vinegar; add salt, pepper, dried basil, tomato paste, and chicken broth. Stir well.
  5. Add cherry tomatoes and simmer for about 5 minutes.
  6. Nestle the cooked chicken back into the sauce and top with mozzarella and fresh basil.
  7. Simmer until everything is heated through or bake at 400°F for about 10 minutes until bubbly.
