  • 1 1/3 cups gluten-free all-purpose flour
  • 2 tsp cornstarch (optional)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 12 gluten-free Oreo cookies (finely chopped and in large pieces)
  • 1/4 cup white chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two baking sheets with parchment paper.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Add in the vanilla extract and egg, mixing until well combined.
  3. Gradually mix in the gluten-free flour, cornstarch (if used), baking soda, and salt until a smooth dough forms. Fold in the chopped Oreos and white chocolate chips.
  4. Using a cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them apart.
  5. Bake for 9-10 minutes or until the edges are set but the centers remain soft. Allow cooling on the baking sheet before transferring to wire racks.
