  • 2 Tbsp granulated sugar

  • 1 Tbsp milk
  • 1 tsp vanilla
  • ½ cup sorghum flour
  • ½ cup brown rice flour
  • 1/4 cup coconut flour
  • 1 Tbsp tapioca starch
  • 1 tsp xanthan gum
  • 1 tsp baking powder
  • ½ tsp salt
  • 3/4 cup raspberry preserves
  • 1 ½ cups granulated sugar
  • 3 cups shredded coconut
  • 3 Tbsp melted butter

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Cream together softened butter and granulated sugar until fluffy.
  3. Add eggs one at a time, mixing well after each addition, then stir in milk and vanilla.
  4. In another bowl, combine gluten-free flours, baking powder, xanthan gum, and salt; gradually mix into the wet mixture.
  5. Spread batter in the prepared pan and top with raspberry preserves.
  6. Mix shredded coconut with melted butter, sugar, eggs, and vanilla; spread over raspberry layer.
  7. Bake for 40 minutes until golden brown.
  8. Allow to cool completely before cutting into squares.
