  • 3/4 cup sugar
  • 2 tsp vanilla extract
  • 1/2 cup dairy-free milk (almond or other)
  • 2 eggs
  • 1 3/4 cup gluten-free all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 to 1 cup finely diced strawberries

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, cream together the softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla and milk until combined.
