  • 1 teaspoon freshly ground black pepper
  • 4 slices pepper Jack cheese

Instructions

  1. In a mixing bowl, combine salsa verde, olive oil, lime juice, cumin, salt, and black pepper.
  2. Add chicken breasts to the marinade and toss until evenly coated. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  3. Preheat the grill to medium-high heat.
  4. Remove chicken from the marinade and discard the remaining marinade. Grill for about 4-5 minutes per side until cooked through (internal temperature should reach 165°F).
  5. During the last minute of grilling, place a slice of pepper Jack cheese on each chicken breast to melt slightly.
