  • 1 lb lean ground beef
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 3 cups cauliflower florets
  • 1 cup cauliflower rice
  • ½ cup carrot (sliced)
  • 1 cup celery (sliced)
  • 14 oz canned diced tomatoes (with juices)
  • 6 cups beef broth
  • 1 cup green beans
  • 1 teaspoon Italian seasoning
  • Salt & pepper to taste

Instructions

  1. In a large pot or Dutch oven, heat over medium-high heat. Add the ground beef, chopped onion, and minced garlic. Cook until browned.
  2. Drain any excess fat if needed.
  3. Stir in the cauliflower florets, cauliflower rice, carrot, celery, diced tomatoes, beef broth, green beans, Italian seasoning, salt, and pepper.
