  • 10 oz zucchini
  • 10 oz yellow squash
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt and pepper
  • Italian seasoning
  • Garlic powder
  • Lemon zest

Instructions

  1. Dice the chicken into small pieces. Slice zucchini and yellow squash evenly.
  2. Season the chicken with salt, pepper, Italian seasoning, and garlic powder.
  3. Heat olive oil and butter in a skillet over medium heat; cook the chicken for 5–7 minutes until golden brown.
  4. Remove chicken; sauté zucchini and squash in the same skillet for 3–5 minutes until tender-crisp.
  5. Return chicken to the skillet; stir in lemon juice and half of the parmesan cheese. Cook for an additional minute.
  6. Garnish with remaining parmesan, parsley, and lemon zest before serving.
