  • 2 apples (such as Fuji or Honeycrisp)
  • 1/3 cup honey
  • 1/4 cup butter (or plant-based alternative)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • Optional: chopped toasted pecans for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Bake unpeeled sweet potatoes on a baking sheet for 40-45 minutes until soft. Allow to cool.
  3. Peel and slice apples; drizzle with lemon juice to prevent browning.
  4. Remove skin from cooled sweet potatoes and slice into 1/2-inch thick rounds.
  5. In an 8×8 or 9×9 baking dish, layer sweet potato and apple slices alternately.
  6. In a small saucepan, melt together honey, butter, cinnamon, and vanilla over low heat; pour over layered casserole.
  7. If using pecans, toast them on a parchment-lined baking sheet under broil for about 5 minutes.
  8. Bake the assembled casserole at 350°F (175°C) for 15-20 minutes until heated through.
