  • 1 ½ cups plus ¾ cup shredded mozzarella cheese
  • 2 ounces cream cheese
  • 1 egg
  • ¾ cup almond flour
  • 6 strips turkey bacon
  • ¼ cup ranch dressing
  • 1 cup shredded chicken breast

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a microwave-safe bowl, combine 1 ½ cups mozzarella cheese and cream cheese. Microwave for 30 seconds, stir, then continue in 15-second increments until melted and smooth.
  3. Stir in the egg and almond flour until forming a sticky dough ball.
  4. Place the dough on parchment-lined baking sheet and press into a rectangle (9×13 inches).
  5. Bake for 8-10 minutes until slightly browned. Let cool for 5 minutes.
  6. Reduce oven temperature to 350°F (175°C).
  7. Cook turkey bacon in a skillet until crisp, then crumble.
  8. Spread ranch dressing over the crust, add chicken, sprinkle with crumbled bacon, and top with remaining mozzarella.
  9. Bake for another 8 minutes until cheese is melted.
  10. Slice into six pieces and serve warm.
