  • 1/4 cup heavy cream
  • 1/4 cup sour cream
  • 1 tsp vanilla
  • 1/4 tsp baking soda
  • 3/4 cup sugar-free chocolate chips
  • 4 oz heavy cream
  • 2 oz cream cheese
  • 1 tbsp Vegan Gelatin
  • 1/2 tsp vanilla
  • 2 tsp cold water
  • 2 tsp Vegan Gelatin
  • 2 tbsp hot water

Instructions

  1. Prepare the crust by combining almond flour, cocoa powder, sweetener, and melted butter in a bowl. Press into a springform pan.
  2. For the filling, blend cream cheese until smooth; add the sweetener, cocoa powder, heavy cream, sour cream, vanilla extract, and baking soda. Mix until combined.
  3. Combine vegan gelatin with cold water and hot water until dissolved; mix into the cheesecake filling.
  4. Pour the filling over the crust and smooth the top. Refrigerate for at least four hours to set.
  5. Make the ganache by heating sugar-free chocolate chips with heavy cream until melted and smooth; pour over the chilled cheesecake.
  6. Slice and serve after removing from the pan.
