  • 1/3 cup granulated sweetener
  • 1 tbsp baking powder

  • 2/3 cup plain yogurt or coconut cream
  • 1/4 cup lemon juice
  • 3 eggs or flax eggs
  • 1 tbsp lemon zest

Instructions

  1. Preheat your oven to 325°F (163°C). Grease or line a 9×5 loaf pan with parchment paper.
  2. In a mixing bowl, combine almond flour, sweetener, baking powder, and salt until well mixed.
  3. In another bowl, whisk together yogurt (or coconut cream), lemon juice, eggs (or flax eggs), and lemon zest.
  4. Pour the wet mixture into the dry ingredients and stir until combined into a smooth batter.
  5. Transfer the batter into the prepared loaf pan and bake for about 50 minutes.
  6. Allow cooling completely in the pan before carefully removing.
