  • 1/2 teaspoon ground cinnamon
  • 1/2 cup granulated sugar-free sweetener
  • 1 teaspoon baking soda
  • 2 large eggs (beaten)
  • 1/4 cup melted butter
  • 1 1/2 cups grated zucchini (with peel)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 loaf pan.
  2. In a large bowl, mix together almond flour, salt, cinnamon, sweetener, and baking soda.
  3. Squeeze excess moisture from the grated zucchini using a kitchen towel then add it to the dry ingredients.
  4. Stir in beaten eggs and melted butter until well combined.
  5. Pour the batter into the prepared loaf pan and smooth out the top.
  6. Bake for 45-60 minutes or until a toothpick comes out clean.
  7. Allow to cool before slicing into 12 servings.
