  • 1 lb flank steak
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1 teaspoon red pepper flakes (optional)
  • 2 cups cooked rice (white or brown)
  • 1 cup kimchi
  • 1 cup cucumber, thinly sliced
  • 1 cup carrots, julienned
  • 1 avocado, sliced
  • 2 green onions, chopped
  • Sesame seeds for garnish
  • Fresh cilantro for garnish (optional)

Instructions

  1. Prepare the marinade by combining soy sauce, sesame oil, brown sugar, minced garlic, grated ginger, rice vinegar, and optional red pepper flakes in a medium bowl.
  2. Place the flank steak in a resealable bag or shallow dish and pour the marinade over it. Seal and refrigerate for at least 30 minutes or up to 4 hours.
  3. Cook rice according to package instructions while marinating steak.
  4. Heat a grill pan or cast-iron skillet over medium-high heat.
  5. Remove steak from marinade (discard marinade) and grill for 4-5 minutes per side until desired doneness is reached.
  6. Let the steak rest for 5-10 minutes before slicing against the grain into thin strips.
  7. Assemble bowls starting with rice as the base, then add sliced steak, kimchi, cucumber slices, julienned carrots, avocado slices, and chopped green onions.
