Instructions

  1. Prepare ingredients: Slice chicken and halve tomatoes.
  2. Cook chicken: Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper; cook until golden (5–7 minutes). Remove from skillet.
  3. Sauté garlic and tomatoes: Add minced garlic to the skillet for about 30 seconds, then add cherry tomatoes and cook for an additional 2 minutes.
  4. Create sauce: Pour in chicken broth and bring to simmer. Stir in cream along with lemon zest and juice (remove from heat briefly when adding citrus).
  5. Cook gnocchi: Stir in gnocchi; cook until tender (3–4 minutes). Add spinach until wilted.
  6. Combine: Return cooked chicken to the skillet; season as needed, garnish with herbs, and serve.
