  • 16 ounces extra-firm tofu
  • 1 tbsp arrowroot starch
  • 2 tbsp vegan butter
  • 78 large garlic cloves
  • 1 1/2 cups vegetable broth
  • 1/2 cup white apple vinegar
  • 1 1/2 cups oat milk or cashew cream
  • 2 tbsp all-purpose flour
  • 2 tbsp tomato paste
  • 1/4 cup fresh parsley, chopped
  • 16 ounces vegan gnocchi

Instructions

  1. Press tofu for at least 1-2 hours to remove excess moisture, then cut into cubes and coat with arrowroot starch, salt, and pepper.
  2. In a large skillet, heat vegan butter over medium heat, add tofu cubes, and pan-fry until golden brown. Set aside.
  3. In the same skillet, sauté minced garlic until golden; deglaze with vegetable broth and apple vinegar. Stir in oat milk (or cashew cream), flour, and cheese. Add parsley and red chili flakes, simmer until thickened.
  4. Stir in tomato paste and sun-dried tomatoes; season to taste. Simmer on low for about 5 minutes.
  5. Cook gnocchi in boiling water according to package instructions until they float. Drain and combine with sauce and crispy tofu.
  6. Serve topped with fresh basil.
