  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 2 mini cucumbers, chopped
  • 1 tablespoon red onion, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1/2 red bell pepper, chopped
  • 1 cup grape or cherry tomatoes, halved
  • 1/2 cup Kalamata olives
  • 3.5 ounces feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1/2 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, add the rinsed chickpeas as the base.
  2. Chop all vegetables (cucumbers, red onion, oregano, parsley, bell pepper, tomatoes) uniformly and add to the chickpeas.
  3. If desired, slice Kalamata olives in half and crumble feta cheese over the top.
  4. In a small bowl or directly in the salad bowl, whisk together olive oil, lemon juice, and minced garlic for the dressing.
  5. Drizzle the dressing over the salad mixture and toss gently until well combined. Adjust seasoning with salt and pepper as needed.
