  • 2 cups heavy cream
  • 1 1/4 cup sweetener (your choice)
  • 1/2 cup raw cacao butter
  • 1 cup peanut butter powder
  • 16 oz cream cheese
  • 2 tsp vegan gelatin (plant-based gelling agent)
  • 3 oz cold water
  • For the crust: peanut flour or additional peanut butter powder, almond flour

Instructions

  1. In a medium saucepan, melt the butter with heavy cream and sweetener over medium heat until bubbly and slightly thickened.
  2. Stir in raw cacao butter and peanut butter powder until smooth. Refrigerate for at least 2 hours.
  3. Combine vegan gelatin with cold water until dissolved; mix this into whipped cream cheese until fluffy.
  4. Fold in the cooled peanut butter mixture until well combined.
  5. Prepare the crust by mixing all crust ingredients together and pressing into the bottom of an 8-inch springform pan.
  6. Pour the cheesecake filling over the crust and chill in the refrigerator for at least 8 hours to set.
