  • 1 1/2 pounds chicken breast (cut into bite-sized cubes)
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt and pepper
  • 1 (4 ounce) can mild green chiles
  • 1/4 cup heavy cream + more for thinning if needed
  • 2 ounces cream cheese (softened)
  • 1 1/2 cup shredded pepper jack cheese
  • 1/2 cup white American cheese

Instructions

  1. In a small bowl, mix together the chili powder, paprika, garlic powder, onion powder, cumin, oregano, salt, and pepper.
  2. Heat olive oil in a large skillet over medium heat. Add cubed chicken and sprinkle with seasoning. Cook until browned and fully cooked (about 3-4 minutes per side). Remove chicken and set aside.
  3. In the same skillet on low heat, add green chiles, cream cheese, and heavy cream. Stir until combined. Gradually add shredded cheese while stirring until melted and smooth.
  4. Return the cooked chicken to the skillet and toss until evenly coated in the queso sauce. Serve hot.
