  • 1/4 cup melted coconut oil
  • 2/3 cup almond milk, room temperature
  • 1 cup shredded carrots
  • 1/4 cup chopped pecans (optional)
  • 1/4 cup raisins (optional)
  • 2 tablespoons unsweetened shredded coconut (optional)
  • 1/4 cup coconut butter
  • 1/4 cup maple syrup
  • 2 tablespoons ghee or butter flavored coconut oil for vegan
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt

Instructions

  1. Preheat the oven to 350°F and line an 8×8 (or 9×9) baking pan with parchment paper.
  2. In a large bowl, mix almond flour, coconut flour, coconut sugar, cinnamon, ginger, nutmeg, and salt.
  3. In another bowl, combine melted coconut oil and almond milk; stir into the dry mixture until well blended.
  4. Fold in shredded carrots and optional add-ins like nuts or raisins.
  5. Pour the batter into the prepared pan and bake for 30-33 minutes until edges are golden.
  6. Allow cooling before frosting with a mixture of coconut butter, maple syrup, ghee (or vegan butter), vanilla, and salt.
