  • 4 boneless skinless chicken breasts
  • 1 egg
  • ⅓ cup almond flour
  • ⅓ cup parmesan cheese
  • 16 ounces low-carb marinara sauce
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese
  • Fresh baby spinach

Instructions

  1. Preheat the oven to 375°F.
  2. Whisk the egg in a shallow bowl.
  3. Combine almond flour, parmesan, garlic salt, Italian seasoning, and pepper in another bowl.
  4. Coat each chicken piece in egg wash then dredge in the coating mixture.
  5. Sear the coated chicken in an ovenproof skillet with olive oil until golden brown on both sides.
  6. Sauté fresh spinach until wilted in the same skillet.
  7. Cut seared chicken into bite-sized pieces and mix with sautéed spinach, marinara sauce, ricotta, and half of the mozzarella.
  8. Top with remaining mozzarella and bake for 20-22 minutes until bubbly.
