  • 1/4 cup oat flour
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg (at room temperature)
  • 1/3 cup light brown sugar
  • 1/4 cup oil
  • 1/2 teaspoon vanilla extract
  • 1/2 cup canned pumpkin
  • 1¼ cups powdered sugar
  • 3 tablespoons pure maple syrup
  • 1 tablespoon dark corn syrup
  • ½ tablespoon water
  • ¼ teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini donut pan.
  2. In one bowl, combine all-purpose flour, oat flour, pumpkin pie spice, baking powder, baking soda, ground cinnamon, and salt.
  3. In another bowl, whisk together egg, light brown sugar, oil, vanilla extract, and canned pumpkin until smooth.
  4. Gently mix the wet ingredients into the dry ingredients until combined.
  5. Pipe the batter into the greased donut pan cavities until halfway full.
  6. Bake for 6-7 minutes or until a toothpick comes out clean.
  7. Cool on a wire rack before glazing with a mixture of powdered sugar, maple syrup, dark corn syrup, water, and ground cinnamon.
