  • 1 tablespoon extra virgin olive oil
  • 1 medium sweet onion, sliced
  • 1 large zucchini, sliced
  • 1 large Japanese eggplant, sliced
  • 3 large fresh tomatoes, sliced
  • Fresh basil leaves (for garnish)
  • Minced garlic
  • Herbs de Provence
  • Salt
  • Pepper

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a baking dish.
  2. In a bowl, mix crushed tomatoes, olive oil, apple cider vinegar, minced garlic, herbs de Provence, salt, pepper, and chili powder.
  3. Pour the sauce into the baking dish and spread evenly.
  4. Layer the sliced vegetables (onion, zucchini, eggplant, tomatoes) upright in the sauce.
  5. Optionally spray tops with olive oil for enhanced browning.
  6. Bake for about one hour until bubbling and veggies are tender.
  7. Garnish with fresh basil before serving hot or cold.
