  • 250 g all-purpose flour
  • 100 g butter
  • 100 ml boiling water
  • 400 g ground lamb (or beef)
  • 1 tsp onion (finely chopped)
  • 1 tsp white pepper
  • 0.5 tsp black pepper
  • 0.5 tsp ground mace
  • 0.25 tsp ground nutmeg
  • 1 egg (beaten for brushing)

Instructions

  1. Prepare the pastry by heating butter and boiling water together. Pour over flour mixed with salt in a bowl and stir until combined. Knead until smooth.
  2. In another bowl, mix ground lamb or beef with onion and spices until well combined.
  3. Roll out the pastry to about 1/8 inch thick. Cut circles for bases and tops to fit pie rings or muffin tins.
  4. Fill each pastry base with the meat mixture generously before sealing with pastry tops.
  5. Brush the tops with beaten egg and bake in a preheated oven at 180°C (350°F) for 30–35 minutes until golden brown.
