  • 5 g psyllium husk powder (1½ teaspoons)
  • 4 g instant yeast (1 teaspoon)
  • 3 g table salt (½ teaspoon)
  • 100 g milk (2%)
  • 44 g butter (melted, 3 tablespoons)
  • 14 g oil (1 tablespoon)
  • 1 large egg (room temperature)

Instructions

  1. In a stand mixer bowl, whisk together the flour, sugar, psyllium husk powder, instant yeast, and salt.
  2. Warm the milk, melted butter, and oil to 120–130°F. Whisk in the egg until fully blended.
  3. Combine wet and dry ingredients; mix on medium speed for 2–3 minutes until smooth.
  4. Divide the dough into four equal portions and shape each into a ball.
  5. Place on a parchment-lined baking sheet about ½ inch apart; press lightly to flatten.
  6. Cover with plastic wrap and let rise in a warm place for 45 minutes to an hour until puffed.
  7. Brush with egg wash and sprinkle with sesame seeds if desired.
  8. Preheat oven to 350°F and bake for about 30 minutes until golden brown.
