  • 2 tablespoons honey
  • 4.5 grams active yeast
  • 260 grams rice flour (white or brown)
  • 80 grams tapioca starch
  • 60 grams sorghum flour (or buckwheat/oat flour)
  • 4.5 grams xanthan gum
  • 2 grams salt
  • 3 eggs (room temperature)
  • 1 tablespoon apple cider vinegar
  • 1 1/4 cups warm water (about 100F/37C)
  • 1/4 cup light olive oil

Instructions

  1. In a small bowl, mix warm water and honey, then stir in yeast and let it proof for about 10 minutes.
  2. In a large bowl, whisk together rice flour, tapioca starch, sorghum flour, xanthan gum, and salt.
  3. Add the yeast mixture, remaining warm water, olive oil, eggs, and apple cider vinegar to the dry ingredients.
  4. Beat the mixture on medium speed until smooth.
  5. Transfer the batter to a parchment-lined loaf pan and tap gently to reduce air bubbles.
  6. Allow the bread to rise in a warm area for about one hour.
  7. Preheat the oven to 350°F (180°C).
  8. Bake uncovered for 45–60 minutes until the internal temperature reaches at least 200°F (93°C).
  9. Let it cool before slicing.
