  • 4 ounces cream cheese, softened
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract
  • ½ cup strawberry jam
  • Pink glaze (made with powdered sugar and a few drops of milk)
  • Sparkling sugar for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together all-purpose flour, baking powder, and salt.
  3. In another bowl, cream the softened unsalted butter and granulated sugar until fluffy.
  4. Add the egg and vanilla extract, mixing until incorporated.
  5. Gradually combine the dry ingredients with the wet mixture until just mixed.
  6. If desired, add pink food coloring for a lovely hue.
  7. In a separate bowl, beat together cream cheese, powdered sugar, additional vanilla extract, and strawberry jam until smooth.
  8. Scoop cookie dough onto a lined cookie sheet and make an indentation in each.
  9. Fill each indentation with cheesecake filling.
  10. Bake for 12–15 minutes or until edges are lightly golden; allow cooling before glazing.
