  • 1215 jumbo pasta shells
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups fresh spinach (roughly chopped) or 1 cup frozen spinach (thawed and drained)
  • 2 cloves garlic (minced)
  • 2 cups marinara sauce
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook jumbo pasta shells in boiling salted water according to package instructions until al dente. Drain and set aside.
  3. In a mixing bowl, combine ricotta, half of the mozzarella, Parmesan, egg, chopped spinach, minced garlic, Italian seasoning, salt, and pepper. Mix well.
  4. Stuff each shell with about one tablespoon of the filling and place them open side up in a baking dish.
  5. Pour marinara sauce over the shells to cover them fully and sprinkle remaining mozzarella on top.
  6. Cover with foil and bake for 20 minutes, then remove foil and bake an additional 10 minutes until bubbly and golden.
  7. Garnish with fresh basil if desired before serving.
